200g lean mince (lamb)

1 medium sized red onion (½ finely chopped, the other half thin slices)

1 tablespoon Leggo’s Pizza sauce with garlic, onion and herbs

1 tomato (thinly sliced)

1 teaspoon garlic paste

2 teaspoon cumin powder

1 teaspoon coriander powder

1 teaspoon chilli paste

1 tablespoon lemon juice

Flat leaf parsley to garnish

1 large Lebanese bread (wholemeal preferably)

3 small cubes of reduced fat feta cheese

1 table spoon pine nuts


  1. Preheat oven to 200˚
  2. Place a non – stick pan on heat and lightly spray with oil. Cook the finely chopped onion until golden brown. Add the minced and garlic paste and sauté for a few min. Add the cumin, chilli paste, coriander and let cook for a further 5 minutes.  Add lemon juice and mix well.  Take the pan off heat once all the meat juices have evaporated.
  3. Place the Lebanese bread on a flat baking tray. Spread the pizza sauce on the Lebanese bread first, followed by the cooked minced.  Top this with the thinly sliced onion and tomato and sprinkle pine nuts and feta. Place the baking tray in oven and bake for 5 mins or until its crisp enough for you. Garnish with parsley and serve.
