A few months ago I was shopping with a friend and came across a home ware store which had 50% off EVERYTHING! And I mean EVERYTHING. In my excitement I decided I ‘needed’ pie dishes that, included a large family size one, and 6 small individual sized ones. I would like to mention I have never ever made a pie before, but for some reason I thought this was a necessity. After I bought them home I got stuck into uni and then headed overseas for a little. Just a couple of days ago I saw them sitting on my kitchen bench and decided it was time to make a pie… clean and healthy of course.

Pie Crust

What you will need…

  • 1 ½ cups gluten free flour
  • 1 tsp. Salt
  • ¼ cup olive oil
  • ½ cup skim milk

What to do…

  • Mix flour and salt in a mixing bowl.
  • Add milk and oil slowly until you have a firm dough. Keep mixing by hand.
  • Place the dough between baking paper and roll with a rolling pin until it is about 5mm thick.
  • Use one pie dish (if you’re using single ones like I did) to cut the size for the top pie piece).

Chicken Filling

What you will need…

  • 400g sliced chicken breast
  • ½ onion
  • 1 large carrot
  • ½ cup frozen peas
  • 2 tsp fresh thyme
  • 1 tbsp gluten free flour
  • Salt and Pepper to taste

What to do…

  • Heat a large pot over medium heat and sauté chicken until no longer pink (3 minutes)
  • Add onion and carrot. Sauté until onion is slightly brown ( 5 minutes) add peas and sauté for another minute until thawed
  • Stir in broth and thyme and cook until warm (2 minutes). Add gluten free flour and reduce heat. Stir constantly until broth is thickened (2 minutes)

  • Season with salt and pepper and remove from heat.

Bringing it together…

  • My version only had the pie crust covering the top, because they are individual servings you can serve them out of the pie dish.
  • Fill each pie dish with chicken filling.

  • Place pie crust over the top removing anything that hangs over the side, make 2 small slices in the middle of the pastry to let any steam out while in the oven.

  • For a golden look brush over with a beaten egg (optional)
  • Place in a pre-heated oven of about 180 degrees.
  • Cook for about 20 minutes or until pastry is golden.
