Cumin Brown Rice Salad

300g brown rice (organic)

1 vegetable stock cube (I use fresh vegetable stock i have already made)

1tsp cumin

½ tbs. lemon juice

1 glove garlic, minced

2 large handfuls fresh spinach

 

Method:

  1. Wash brown rice and place in Thermomix basket.
  2. Fill Thermomix bowl with 900g of water with vegetable stock.
  3. Cook for 30-35minutes at Veroma Temperature on speed 4.
  4. Check if rice is cooked to your liking. Place spinach leaves in large bowl and put cooked rice on top. Mix together with cumin, lemon and garlic.
If you don’t own a thermomix dont stress! Its still simple.
       1. Wash brown rice and put in a saucepan
       2. Cover rice with water, combine with vegetable stock
       3. Cook for 30-35min simmering on medium heat.
       4. Check if rice is cooked to your liking. Place spinach leaves in large bowl and put cooked rice on top. Mix together with cumin,
           lemon and garlic.
Its as easy as that! We served ours up with a stuffed spinach and ricotta chicken breast and some garlic greens. xo s&j xo
