Super-grain : Spiced Quinoa Pilaf

Quinoa is a complete protein containing all the 9 essential amino acids, Has twice as much fibre as rice & Higher protein content than brown rice and is gluten free


1 tablespoon olive oil

1 small onion (chopped)

1 green capsicum (chopped)

1 small tomato ( chopped)

1 carrot ( chopped)

1 cup frozen peas

400 g canned chickpeas ( rinsed well to get rid of salt)

2 tablespoon tomato paste

2 teaspoon garlic paste

1/2 teaspoon chili paste

3/4 cup quinoa (rinsed)

1/2 teaspoon coriander powder

1/2 teaspoon black pepper

2  teaspoon cumin

1 1/2 cups chicken stock (salt reduced)

salt to taste


1. In a saucepan, add Olive oil and sauté onion ( on medium heat)until it has softened and turned translucent

2.  Stir in the garlic paste and add all the chopped vegetables and Spices. Let it cook for 2 -3 minutes and then add the tomato paste & chili paste and mix well.

3. Add the quinoa and the chicken stock and bring to boil. Then reduce the heat to medium – low and simmer for 20minutes until the quinoa is tender.

4. Add the chickpea and let it simmer for another 5  minutes.  All liquid would have evaporated by now.

Serve  warm with a lemon wedge
