Kale has become fairly popular lately with many people adding it to smoothies, salads and even making chips out of it. If you can’t find kale you can easily use spinach. Don’t stress.

Kale is low in calories, high in fibre and has zero fat. Nutritionally it is high in iron, vitamin K, vitamin A, vitamin C, calcium and packed with antioxidants. Kale is also a great anti-inflammatory food!

What you need…

  • Juice of 2 lemons
  • 2 tbsp honey (or other sweetener of juice)
  • ¼ cup spicy mustard
  • salt and pepper
  • kale
  • cauliflower
  • yellow and red capsicum
  • red onion
  • blueberries
  • slivered almonds
  • sunflower seeds
  • salt and pepper

What to do…

  • Combine lemon juice, honey, and spicy mustard in a small bowl
  • Whisk until well combine and emulsified
  • Salt and pepper to taste, set aside dressing
  • Remove the thick stems of the kale and finely chop.
  • Place cauliflower in a blender and pulse until the consistency of rice. Add to the kale.
  • Finely chop the capsicums and onion. Add to the bowl.
  • Add blueberries, almonds, and sunflower seeds. Toss salad.
  • Salt and pepper to taste.
  • Toss with Lemon Honey Mustard when ready to serve.
